I've read that you should only cook with saturated fats (eg: lard or tallow or bacon grease, but not olive oil) because the unsaturated oils create toxins when exposed to prolonged or high heat.
Ever heard this before, or am I misinformed?

I've been making cauliflower rice risotto a lot lately. Double cream, fiery chilli pesto, spinach, onion, parmesan and chorizo or cubed pancetta…..It is bloody delish.

It always confounds me why recipes say to keep the hard tail shell on the shrimp/prawn. It's surely so much easier to remove the shell before cooking so that everything can be eaten without stopping do chew on a shrimp/prawn and then discarding the tail shell!
Are there any alternatives for the mushrooms? I really dislike them…but I love shrimp!
