This is a very simple keto recipe to prepare and tastes even better the next day! Next time you are looking for an easy keto side dish, you need to make Keto Macaroni Salad!!

KETO MACARONI SALAD:
2 packages of Miracle Noodle Ziti (link to purchase below)
½ c mayonnaise
3 T sour cream
1 ½ T apple cider vinegar
1 T dijon mustard
½ t salt
Juice from ½ lemon
1 ½ t Lakanto monkfruit sweetener
1 c diced celery
¼ c diced red onion
¼ c diced green bell pepper
¼ c quartered grape tomatoes
1 T minced parsley

Prepare Miracle Noodle ziti according to the package directions. Let cool.
In a small bowl, mix together mayonnaise, sour cream, apple cider vinegar, mustard, salt, monkfruit, and lemon juice. Set aside.
In a large bowl, add Miracle Noodle ziti, celery, red onion, bell pepper, tomatoes and parsley. Mix in the dressing. Stir to combine.
