I have made these and I didn't like cauliflower. I did double the garlic and I was amazed how good they were. I didn't even use the parmesan cheese.

Looks good. I'm thinking of substituting cauliflower prepared like this in a stuffed potatoes recipe. Do you think it will work (hold together in patties, with an addition of flour)?
Shouldn’t the liquid be taken from the cauliflower before blending? It stays very watery when this step isn’t done. 🤷🏻♀️

Can frozen cauliflower be used with equal results?
That's the best way…steamed not boiled. I add the butter after plating for a thicker consistency. We love it mashed!
