KETO MAC AND CHEESE 2 WAYS! How to Make Cauliflower Mac & Cheese + Low Carb Pasta Mac and Cheese!

Mac & Cheese Recipe (WITH LOW CARB PASTA):

Servings: 10-15

Ingredients:
2 cups heavy cream
1 tsp minced garlic
4 tbsp butter
2 oz cream cheese
¼ red onion
1 tbsp keto wheat flour (OR ½-1 tsp xanthan gum to thicken)
1 package of low carb elbow macaroni (I used this one:
1 cup shredded sharp cheddar cheese
1 ½ cup shredded cheese blend
½ cup white cheddar blend
¼ tsp garlic powder
¼ tsp black pepper
Pinch of turmeric for color (about 1/4 tsp)

⅓ cup pork rinds (I used this brand:
⅓ cup parmesan
Optional: Oregano or Italian seasoning

  1. I was just thinking of mac and cheese today and wondering if someone's come up with a keto version! SO excited to try this! (PS I'm pretty sure iodized salt is good for you (iodine is necessary for thyroid health), its just that table salt is "processed" and sea salt can contain plastics from the polluted oceans)

  2. What is the brand noodles? Girl, cut those nails before you hurt yourself 🙂 Isn't the cream cheese a FAT? Adds to your weight? I would cut the cream cheese (fattening) and just go with the milk flour (almond or gluten free) and cheese.
    I get Trader Joe's guilt free mac & cheese, or I make Amy's mac & cheese.

  3. Your supposed to boil the water first then put the pasta in for 10 minutes. They way your doing it the pasta will be in the water for 20 minutes twice as long . Because it takes 10 minutes for the water to boil. The you add salt to season the pasta only after the water boils.
