I hope you are doing good. Today I would like to share a low calorie vegetarian/vegan keto meal With you. Masala Baingan / Eggplant Curry is super easy to make!

Ingredients

1 kg Eggplants, cut like French fries
1/2 Cup Olive Oil
250 ml Tomato purรฉe
1 Onion small, finely chopped
2 Garlic Cloves, minced
1 inch Ginger piece, minced

1 tsp Cumin Seeds
1/2 tsp Garram Masala
1/2 tsp Red Chili Powder
1/2 tsp Cumin Powder
1 tsp Cilantro Powder
2 tsp Dried Fenugreek leaves
1/2 Turmeric Powder
1 tsp Salt

1-2 Green Chili
2 tbsp Fresh Cilantro, chopped

Each serving (5 servings)
287 calories
8.8 g net carbs
3.2 G protein
25 g fats
