Keto & Low Carb Mini Crustless Pumpkin Pies Recipe (No Bake)
Ingredients:
•1 cup heavy whipping cream
•16 oz cream cheese, softened
•15 oz pumpkin puree
•1 cup powdered monk fruit sweetener
•1/2 tsp vanilla extract
•1 Tbsp pumpkin spice
•1/4 tsp sea salt
Method:
•In a small mixing bowl, add heavy whipping cream and beat until stiff peaks form.
•In a separate medium mixing bowl, add softened cream cheese and beat until light and fluffy.
•Add pumpkin puree and mix until smooth.
•Add powdered sweetener and mix until smooth.
•Add vanilla extract, pumpkin spice, and sea salt and mix until well incorporated.
•Fold in whipped cream gently until just combined.
•Pour into lined cupcake pan or silicone mold.
•Refrigerate overnight. Can be frozen if it doesn’t set up after refrigeration.
