I figured out delicious keto thumbprint cookies and wanted another cookie to add to the video and I really wanted to do a traditional Italian Christmas cookie. I really wanted to make Italian cucidati cookies but they have a bunch of ingredients not good for keto but maybe when I get pregnant and do more low carb I will attempt a recipe for next Christmas!! I saw pictures of chocolate dipped Italian butter cookies and thought they looked amazing so I got to work. Crispy on the outside, soft and buttery in the middle so yummy!!!

Can I substitute the Whey for egg white protein?
yeah so I followed another raspberry recipe that called for gelatin, it was AWFUL!!! This one I have done for a few years and it is so much better. I thought adding the gelatin it would give it more of that jelled kinda texture, but it was like jello, hated it lol. Maybe the instructions just added too much… I'm not sure but I'd rather have the fresh taste than that crap! Thanks again 🙂
I made the thumbprint cookies last night. The dough was so mushy, like mashed potatoes. I had to freeze them for a while and then I had to thaw before I could make the thumbprint. Why do you think it was mushy?

Thanks for the recipes! Love them! One question: you are talking about how the sweetener crystals do not dissolve and should be whipped for a long time. Why not use powdered sweetener, instead? Problem would be solved….
I tried the thumbprints today (used store bought jam), and am very pleased. Recently I have begun to have issues with almonds, so I wanted to experiment with non-almond recipes. I tried coconut flour some time ago, but found it so dry I couldn't swallow it. That is NOT the case with your recipe. It is so good, WITHOUT that dryness. Thank you for sharing.

Thank you for these recipes, brought back happy memories with Mom, we did use Nutmeg in one of our cookies, they were like your Italian ones and were called Nutmeg logs. I also HAVE to make Russian Tea Cakes or Mexican Wedding Cakes. I'll have to check f you made them already.

I use citric acid powder instead of lemon juice otherwise you just have to boil it longer to get rid of the extra water.
