I miss fried pickles so much, and loved ordering them as appetizers at restaurants. I wanted to make them keto-friendly, so here’s my recipe for these amazing keto fried pickles!
Keto Fried Pickles:
10 Pickle spears, patted dry
1 cup Pork rinds, grounded
1 cup Parmesan cheese, grated
2 tsp Garlic Powder
1/4 cup Almond flour
Optional: Any other seasoning you want
1. Lay out your pickle spears on a plate and pat them down thoroughly with paper towels. Set aside.
2. In a large plate, combine pork rinds, parmesan cheese and mix. This is your breading.
3. In a large bowl, add garlic powder and egg in a bowl. Beat your egg mixture and set aside
4.Create your assembly line – Almond flour, egg, breading, egg, breading.
5. Coat your pickles following this assembly line.
6. Add to air fryer, and air fry at 400F for 15-20 mins until crispy. You can also do this stovetop with avocado or olive oil.
7. Serve with your favorite sauce and enjoy!
