If you liked that recipe from Nilli you should try her Next Level Butter Bread it’s even better.
I am already wondering what that would taste like put into muffin tins, baked up then slathered with butter and low carb strawberry jam. nom nom! Or as a flat with some bacon, cheese and fried egg. that would be better than anything mcdonalds or burger king would put out for breakfast.
Use "butter powder" instead of whole egg powder!
Indigo's makes a fabulous pizza crust too!!!
I don't think this is protein sparing as it has fat in it, but this is a really good low carb bread. I'm carnivore and I make this occasionally. You could leave out the few non-carnivore ingredients, but I don't know how that would affect it. I just keep them in and they haven't caused me any digestive or other issues. It's really good.

I use a modified Indigo Nili to make hamburger rolls but use individual silicone bowls with "Everything But the Bagel" sprinkled on top with minced onion. Perfect every single time! (Plus, the "rolls" can be easily frozen for later use).
The first one reminds me of angel food cake. LoL.
I had a feeling you'd be showing Indigo Nili's version of egg white bread. I truly appreciate Maria Emmerich for the original recipe, even though I didn't care for it. Her modified version with egg white powder is much better, but Indigo's version took it to a whole 'nother level. It's an extra, small step, but I always sift the whole egg powder before adding. Another thing I do is score the top before baking. It doesn't seem like it will do much, but loaves always turn out perfectly shaped. This is my 'go-to' recipe for bread, buns, and almost everything else where I used to use wheat breads. Also, if you allow the bread to dry out, you can process it for bread crumbs.

I use Alicia’s (Keto Upgrade) yeast risen version but cut the butter powder or cream powder (optional) in half. It makes NO sound whatsoever when you tear it, tastes wonderful (I reduce the allulose by 1/3) and score it down the middle. I had my non keto hubby try it, some non keto friends try it and a keto friend try it. The all agreed it was just like Wonder bread. I never bought Wonder bread before but as a sandwich bread this beats every keto recipe I have tried. Soft, strong, and good flavor. The only drawback is waiting for it to rise before baking. It doesn’t rise much but it does rise. Scoring it before baking keeps it from exploding into weird shapes. You can’t toast any of these because the crust will burn before the center toasts. But I have pan toasted it before. Hamburger buns hold up fantastic as do hot dog buns. It’s a staple here. Even if you don’t demo this one, you should try it for yourself. I suggest reducing the butter or cream powder because fat can make the sides shrink so less works better and the taste is still great. Really! None of that stale texture you mentioned in the two you tried here. Watch her video demo because she also makes onion rolls and Italian hoagies. Good luck Wes! Thank you Wes. I’ve tried so many of these breads in the beginning and every one of them came out like memory foam. Some creator’s have tried and tested them until they came up with some good ones, I quit trying to make them guess it’s time to try them again. I would try the first one again but there are some delicious ones out there.

Better to add the water first or you can get powder that doesn't mix from the bottom.
I make Indigo Nili's recipe but I use 2 8×4 pans and bake at 30 minutes. Also these loaves freeze really well! She also recommends slashing the top of the loaf so it's less likely to "blow out"
In my experience these breads are always better a day later, kept in fridge, less dry crust

My understanding, is that cream of tartar, is a byproduct of wine making.
Sadly, I find it all nasty, but I'm kicking myself that I didn't suggest this a year ago. Great idea for a video. (Haven't watched it yet but I will)
Another good channel is Ketogenic Woman. She also makes slight changes to both Maria and Nili's bread recipes. I really like her approach to her videos too.

Hello. Cream of tartar is a powdered acid (specifically, a powdered form of tartaric acid). It’s a byproduct of winemaking (grape fermentation) that’s collected and purified. It’s on the insides of the wine vats and is collected after the vat is empty.
