Keto Detox Salad


4 medium Radish, raw
3 tbsp Extra virgin olive oil
2 cups Kale
1 tsp Chia seeds
1 tbsp Pumpkin seeds
1 Avocado
1 cup Rotisserie chicken
1 tbsp Lemon juice
0.5 tsp Mustard
0.5 tsp Salt, sea salt
0.33 cups Cucumber
0.13 tsp Black pepper


1. Dice the cucumber, thinly slice the radishes, and slice the avocado. Add the kale, radishes, cucumber, and avocado to a large salad/serving bowl. Season with a little salt and pepper and toss to combine.

2. Add the lemon juice, olive oil, mustard, chia seeds, salt, and pepper to a mixing bowl. Whisk together to combine until smooth. Taste and adjust seasonings as required. You may add more oil, lemon or salt as needed.

3. Roughly tear the cooked chicken and add to the salad. Drizzle the dressing over the salad and gently massage into the leaves, vegetables and chicken. Set aside for 10 minutes to soften the kale, then scatter over the pumpkin seeds to serve.
