These low-carb chicken and waffle bites are absolute eye candy. We fry up some breaded chicken strips then serve them up with impossibly fluffy Belgian style waffles. Then we stacked the sandwiches with mustard, bacon, pickles and even a drizzle of sugar-free maple syrup! Serve these for brunch on a special occasion, and you won’t soon forget it.

Ingredients:
Waffles:
2 tablespoons melted butter
3 large eggs, yolks and whites separated
¼ cup milk
1 cup almond flour
½ teaspoon salt
1 teaspoon vanilla
1 tablespoon erythritol

Chicken:
1 cup buttermilk
2 medium chicken breasts
1 large egg
1/3 cup almond flour
Oil, for frying
Salt and pepper, to taste
1 teaspoon paprika
¼ teaspoon cayenne powder

Optional: Sugar-free syrup, bacon, pickles, and mustard.

  1. I started Keto inadvertently after a 5 day fast about a month and a half ago. When I realized what I was doing and then researched how it works, I decided to give it an intentional whirl… I already feel more confident in my resolve now that I know this exists!
