Rose & I made low carb keto hummus from cauliflower! #shorts

1 medium size head cauliflower
4 cloves garlic
1/2 cup tahini
zest & juice of half lemon
1 tablespoon extra virgin olive oil
3/4 teaspoons salt
Few cracks of pepper
Bring a medium size pot of water to a boil and season with 1 tablespoon of salt. Meanwhile, cut the cauliflower florets into large bite size pieces and take the garlic out of the skin. Add to the boiling water and cook for 10 minutes. The cauliflower should be soft, but not mushy.
Drain well and add to a blender with the tahini, lemon zest & juice, olive oil, salt, and pepper. Blend on high for 1 minute, adding a touch more water if the consistency is too thick. Check for seasoning and enjoy!
