I can't eat kale. What is a good alternative?

I just made this at home. I used regular kale because thats what my grocery store had and used Great northern beans because I already had them on hand. But this salad is a 10/10. I just wanted to say thank you, because I’m on a journey of healing my food relationship and aversion to veggies. And now I can say I know a way to eat kale!! Thank you so much for such an amazing recipe. It’s the best veggie salad I’ve ever had

Lasinado kale (crumply type) is soft enough to eat, other types are stringy and tough, and not good unless cooked…
