A favorite quick lunch that upcycles last night’s chicken— there is nothing not to love about Leftover Chicken Soup. 🙌🏼♻️🍲 #PretendCookingShow Leftover Chicken Soup Ingredients: 1 cup diced onions 1 cup diced carrots 1 cup diced celery 4 Tbsp olive oil 3 cloves garlic, minced 3 tsp thyme 3 tsp dried oregano Pink of chili flakes 1 Tbsp white balsamic or champagne vinegar Leftover chicken (appx. 3 roasted breasts) 1/4 cup lemon juice 1 Tbsp honey Salt Pepper 2 boxes chicken stock . Directions: 1. In a large Dutch oven soften onion in 2 Tbsp of olive oil. Add carrots and celery. Soften. Add garlic. Stir for a minute. 2. Add thyme and oregano, rubbing between your hands to break apart. Stir. Add chili flake. 3. This is the key! Add white vinegar to the center of the mixture. Stir. 4. Shred chicken and mix into the vegetables. 5. In a small bowl, whisk together lemon juice, 2 Tbsp oil, honey, salt and pepper. 6. Make a well in the middle of the pot, pushing all chicken and veggies to the sides. Pour lemon mixture in the well. Allow to bubble. Stir for a minute and let reduce. 7. Add chicken stock. Bring to a boil and then reduce to simmer. 8. If you like brown rice or noodles (🙋🏻‍♀️)— cook as directed, separately, and add to each bowl as they are ladled out. 9. Yum. Date: 23, June 2021. .

  1. Love Jennifer Garner… my wife is so jealous! I told my wife Jennifer would never have any to do with me!She said "Why Not" … now you know why I love my wife to pieces!!! Lol! Ok soup looks great… it looked like she did put some pasta in in the end… should have been noodles!!! Jen is right, good box stock will really do the trick… especially when you supplement it the way Jen does. However my mom always made chicken soup with a CHICKEN… and dumplings btw… and I will admit it was better. I wonder if it came out a bit salty??? LOL!

  2. I love soup this looks good i would make it but my kids complain if i make soup in summer… or whenever i make soup…"it's not real dinner" i hear. The other day one of my daughter's asked when are you making pho again? I said that's soup though during summer which I've got scolded for before… She told me that's different. Do i understand? No. Am I happy she likes my food yes. Put a check mark down for mom. Jen darling your an inspiration to cooks and moms everywhere!

  3. This made me hungry. First time to see chicken soup mixed with lemon. I was thinking it might be too sour with the 1/4 cup but i guess reducing it helps to tame the sharp sour taste. The lemon will surely make the soup taste fresh and summery and somehow makes it like a mexican soup. I bet topping it with cilantro will go well.

  4. I really enjoyed watching you and your precious momma making Blackberry Cobbler; reminded me of my mother & I making Cobblers, etc; she was precious, too; I miss her; she passed last year from Covid 😔Our mother's have a striking resemblance to one another. I watched it twice😘
