200 grams firm tofu
1/4 teaspoon salt
2 tablespoons vegetable oil
150 grams shiitake mushrooms (cleaned and sliced)
1 tablespoon soy sauce
200 grams soba noodles 
2 tablespoons soy sauce
1 tablespoons toasted sesame oil
2 teaspoons maple syrup 
1/2 teaspoon konbu cha
30 grams scallions (chopped)

  1. Made this for dinner tonight… I had the konbu cha and matcha soba noodles on hand (from a previous Kokoro package), I only substituted green onions for celery shoots. An absolutely delicious and stunningly beautiful dish, came together in less than 30 minutes! This one is a keeper especially for hot summer months – thank you for another great recipe Marc!
