You say baking soda but your recipe says baking powder. I do not want to ruin this blender full of stuff. I reallly like your channel and recipes but this one…. Nope… many people asked you to clarify if it’s baking powder or baking soda. And many asked about the quantity of the beans. I soaked one cup of dry overnight and ended up with a HUGE amount of soaked beans. This cannot be correct. I’m bummed because I don’t want to waste all these ingredients and have it come out like a thick paste and inedible. PLEASE CLARIFY for us novice vegan egg people. Thank you

Thought, what if you add to the batter for the omelette, once in the pan, some bits of the other scramble to give it a bit more texture?
I’ve tried this recipe twice and my “egg” is turning to orange mush when I cook it. What am I doing wrong?! I soaked my mung beans overnight, but I did use grape seed oil instead of olive oil. Could that be why?
Another question: do you have to use nutritional yeast? I'm not vegan, I just have food sensitivities/issues

Just made the transition and have seen many mung bean/yellow lentil hack videos for eggs and yours looks the most appetizing. I never thought I would miss eggs so much since I stopped eating them!

Ready-made is so unhealthy. If you make it fresh, you’re not just saving money but you’re making a healthy version.
No matter how many times I tried to make a "Just Egg" Egg Foo Young all that I get is scrambled.
I tried non stick pans & stainless steel pans with & without a vegan oil or vegan butter but nothing helps. It never cooks into a pattie or omelet, just scrambled eggs.

Are you using baking powder or baking soda? Your recipe I printed says baking powder.
I followed your recipe to a tee and after cooking it it taste a bit sweet. Could it be the tapioca starch that makes it sweet?
Sorry, but it was a gloppy mess. Waaaaay too salty, with the texture of polenta. We followed instructions to a 'T' but we're on to the next recipe.

Make a vegan Chinese omelette plus stir-fried Purple Sprouting for breakfast(non-vegan vid link below). I grew up on super-healthy home-grown Purple Sprouting – not knowing it was related to posh pristine broccoli. Spinach omelette is OK but Purple Sprouting is much more chunkily luscious for a change.

Just made this and I absolutely love the taste! But the texture is very potato-like (which doesn’t bother me too much) and is gloppy while cooking. I used cornstarch instead of tapioca, is that possibly why?
