INGREDIENTS
2/3 cup uncooked farro
1 tablespoon extra virgin olive oil
1 large yellow onion, diced
3 carrots, peeled and chopped
3 celery stalks, sliced
1 teaspoon sea salt
1/8 teaspoon crushed red pepper flakes
4 cloves garlic, minced
1 medium zucchini, diced
5 sage leaves, chopped
leaves from 3 thyme sprigs, chopped
32 oz. vegetable broth
15 oz. diced tomatoes
1 1/2 cups (15 oz. can) Cannellini beans, drained and rinsed
