Easy Weeknight Fried Rice with Eggs and Vegetables
Feel free to substitute whatever protein and veggies you have on hand. I love using frozen vegetables and then anything else in my fridge that needs to get used up.
Makes: 4 servings
Time: 25 minutes
Ingredients:
2 teaspoons plus 2 tablespoons avocado oil
4 large eggs, beaten
2-3 cloves garlic, chopped
2 cups mixed vegetables, diced (try onion, pepper, carrots, frozen peas, frozen corn)
2 cups cold cooked white rice
3 tablespoons reduced-sodium soy sauce
Instructions:
Heat 2 teaspoons oil to a skillet or wok over medium-high heat. Add eggs and cook, lightly moving around and flipping until fully cooked, about 2-3 minutes. Transfer to cutting board and cut into pieces.
Add 1 tablespoon oil to pan, along with fresh vegetables, cook for 2-4 minutes until vegetables start to soften. Add garlic and any frozen vegetables and cook 1-2 more minutes. Transfer to bowl.
Add remaining tablespoon of oil to pan, add rice and stir for 1 minute, coating the rice in oil.
Return the vegetables and egg to the pan and add soy sauce. Stir to combine.
