Thanksgiving doesn’t have to mean skipping the sides. My mom and I are in the kitchen this week, making an indulgent, keto-friendly Thanksgiving STUFFING!

Shout out to my friend Elizabeth (IG’s @that_keto_nerd), who pointed me in the direction of this recipe, which originated with @cavemanketo and was then altered by @ketoincourt.

Caveman Keto’s Almond Bun Stuffing:

We used Keto Connect’s “Best Keto Bread” for the breading:

Dividing this entire dish into eight servings, here’s what you get for macros:

Calories: 417
Fat: 34g
Protein: 21g
Net Carbs: 6g

With a serving of Macadamias sprinkled on top, you get this:

Protein: 22g
Net Carbs: 6.5g

  1. Keto Stuffing – A.D. Keto
    8 servings

    2 TBS butter
    ½ cup onion, chopped
    3 stalks of celery, chopped
    2 garlic cloves, minced
    2 TBS ? green onions, chopped
    1 lb sweet italian sausage, ground or removed from casings

    1 loaf KC keto bread (https://www.ketoconnect.net/best-keto-bread/), cubed into bite sized pieces

    1 cup heavy whipping cream
    1 cup bone/chicken broth
    2 eggs

    1 TBS of pink salt
    1 TBS parsley
    1 TBS thyme
    1 TBS rosemary
    1 tsp garlic powder
    1 tsp pepper

    1oz Macadamia nuts (pecan, walnut, any nut), chopped for garnish (optional)

    Preheat oven to 350F.

    Melt the butter in the skillet and saute onion and celery. Once softened, add garlic and green onion. Saute for a minute and add sweet Italian sausage. Brown sausage until done.

    Mix heavy cream, chicken broth, and eggs together.

    Mix spices together. Add to cream mixture and whisk. Add cubed bread, mix well. Add sausage mixture and mix.

    Grease a 13 x 9 casserole dish. Pour stuffing in.

    Bake at 350F for 1 hour. *if using nuts, see below

    *After 45 minutes of cooking, sprinkle stuffing casserole with nuts and finish in the oven for the last 15 minutes.

  2. I tried your recipe for Christmas dinner. It was EXCELLENT! I had trouble making the bread, my food processor didn’t get it to a dough ball. It stayed more liquidy, I had to put in a bowl and add another cup of almond flour. Thank God I was able to salvage it, and it did rise. It was more of a dense bread but it did soak up the stuffing liquid. It tasted great, but definitely needed gravy. I made a Keto gravy with beef bone stock and thickened it with Xanthum gum. Gravy makes a huge difference. Otherwise, it would have been too dry. I struggle with my vintage gas oven that apparently bakes faster than modern ovens so I think it got a tad over cooked so that’s why it was drier. Now I know what adjustments I need to make for next time. THANK YOU, awesome for us Gluten intolerant people.

  3. I’m trying your recipe for Christmas dinner. Very labor intensive having to bake your own bread, but fingers crossed it will be worth it. It’s all done in my refrigerator to be put in the oven tomorrow. I hope it doesn’t dry out. I wrapped it in serán wrap. Thank you and Merry Christmas.

  4. Made this for Thanksgiving and it was a smash hit. I made macadamia nut bread for my keto bread. It came out superb. Nobody, and I mean nobody believed it was low carb.
