How to make Vegan Breakfast Muffins that are soft and fluffy but completely plant based is easier than you think! It can be difficult to get the same texture with oil free cooking but luckily these vegan blueberry muffins and vegan banana muffins have such a great texture, you won’t miss a thing.

Rather than using sugar, I rely on the natural sweeteners like maple syrup and fruit so both vegan breakfast muffins are completely refined sugar free! Non-dairy yoghurt also gives the muffins their fluffy interior and the coconut milk helps to make for more satisfying healthy vegan muffins.

Whether you’re are currently trying out veganuary recipes, or you are just interested in healthy breakfast ideas – these healthy breakfast muffins are a great addition to your morning meals!

How to make Vegan Breakfast Muffins | Oil Free & Sugar Free | Veganuary Recipes:

Vegan Blueberry Muffins Recipe:
• 1 ½ cups Wholemeal Flour
• 1/3 cup Rolled Oats
• 2 teaspoons Cinnamon
• 1 teaspoon Baking Powder
• ½ teaspoon Baking Soda
• 1/3 cup (80ml) Coconut Milk
• 2 teaspoons Vanilla Extract
• ½ cup (150ml) Maple Syrup
• 200g Plain non-dairy Yoghurt
• 1 lemon, grated
• 1 ½ cup Blueberries

Vegan Banana Muffins Recipes:
• 3 extra ripe Bananas
• 1 ½ cups Wholemeal Flour
• 1 teaspoon Baking Powder
• 1 teaspoon Baking Soda
• 1 ½ teaspoon Cinnamon
• ½ teaspoon Nutmeg
• 1/3 cup (80ml) Coconut Milk
• 1 ½ teaspoon Vanilla Extract
• ½ cup Maple Syrup
• 200g Plain non-dairy Yoghurt
• ½ cup Chopped Walnuts 55g

  1. These worked out really well Elise! I'm always looking for whole grain recipes with no refined sugars but unfortunately not every recipe works out well. These, thankfully, are scrummy!!! I did use normal greek yoghurt and had to sub the maple syrup for date syrup as that's all I had in the cupboard at the time. Still worked out delish and I had them for breakie every day last week 😋
