These delicious vegan zucchini & carrots fritters are crispy on the outside and moist on the inside with a perfect savory flavor and it’s quick and easy for a wonderful light meal.

Ingredients:
β€’ 3 cups grated zucchini
β€’ 2 cups grated carrots
β€’1 teaspoon salt
β€’ 1 cup all purpose flour or whole wheat
β€’ 1/4 cup nutritional yeast
β€’ 1 and 1/2 tsp baking powder
β€’ 1/2 tsp crush garlic
β€’ green onions, chopped
β€’ 1 cup vegan butter( melted)
β€’ 2 tablespoon olive oil for frying
β€’ 1 tbsp Oregano
β€’ 1 teaspoon chili powder

FOR CASHEW cream
β€’ cup raw cashew – soaked in a water for 4-8 hours and drained
β€’ 1/2 cup almond milk
β€’ 2 tablespoon lemon juice
β€’ salt to taste
