I love your recipes for the most part, but this one was kind of disappointing because you omit (and don’t even mention) the one ingredient that gives authentic boat noodles the richness that is so characteristic of the dish… fresh blood! But I suppose you might have done so to appeal to the more western taste… and to keep many non-Thais from throwing up a little in their mouths. Lol!

  2. My husband is Thai and my mother in law is an Amazing cook who is very well known for it! I now make a large pot of these noodles at least every other weekend as this recipe tastes very close to hers, So Yummy & Comforting! We also add Pork Skins or Chicharrones Pork Rinds! Thanks Marion, Your Recipes Rock! Pretty sure the hubby thinks so too! 🙂
