What you’ll need:
6 apricots
1 tbsp water
1-2 tbsp lemon juice
3/4 cup sweetener of choice
1 tsp xantham gum (if using sugar-free alternatives only. No need to add this if using regular sugar.)
1. In a pot, add the water & lemon juice & de-pitted apricots
2. Place pot over stove on medium heat. Allow apricots to tenderize. (To help speed up the process, mash the apricots up with a fork)
3. Add the sweetener/sugar of your choice & return pot to heat
4. Keep stirring until sweetener is dissolved & the jam liquid has thickened
5. Optional: remove pot from heat and add xantham gum. Stir well to get rid of lumps.
6. Pour into a container, glass jar or bowl and place in the fridge to set – preferably overnight.
