This Romaine Lettuce Avocado Salad Recipe is Vegan friendly, Gluten-Free and a great healthy addition to your salad rotations. It’s the best in the summer when fresh avocados are in abundance and easy to make. Avocado is a superfood which is incredibly nutritious and is packed with healthy fats and many vitamins and minerals. I will also show you how to make a simple, healthy and delicious salad dressing using only 4 ingredients.

⬇️ RECIPE ⬇️
1 head organic romaine lettuce
1 can organic corn (drained and rinsed)
1 persian cucumber, sliced (or ½ english cucumber)
½ red onion (sliced)
½ red bell pepper (sliced into thin strips)
½ yellow bell pepper (sliced into thin strips)
1 tomato, chopped (or cherry tomatoes)
1-2 avocados (chopped)
1 tbsp lemon juice (to mix with avocado)
1 tbsp Extra Virgin Olive Oil
1 tbsp organic Apple Cider Vinegar
sea salt and pepper (to taste)
Add all the ingredients to a large mixing bowl, except avocado and lemon juice. Mix avocado with lemon juice, then add with the rest of the ingredients. Mix the dressing and toss with salad before ready to serve.
