2 Tbsp Olive oil
1 cup of water
1 Pack firm tofu, cubed
1 large russet potato, cubed
1 large roasted and peeled poblano, chopped
1/2 white onion, thinly sliced
Small bunch of cilantro (5 stems), chopped
2 Tbsp Ap flour
2 Tbsp veggie bouillon (Torrington farm vegan soup base)
1 tsp Mexican oregano
1 tsp ground cumin
1/2 tsp paprika (smoked works great)
1/2 tsp salt (Himalayan)

Served with a side of rice and black beans

Special mention:
Garlic is a vegetable that grows as a bulbous plant consisting of a single head or bulb that can be easily separated into smaller parts known as cloves. What do you call single garlic? I call those cloves lol

  3. I made this tonight and am enjoying it as we speak. I eat keto so I had to sub out the potato for turnip. Made it a tiny bit spicier and also added some ground veggie burger meat. It's delicious and I love it. This is going to be a go-to vegetarian meal, thank you so much for sharing it. ❀
