Homemade Vegetable Soup Ingredients:
1/2 cup each, carrots, celery, onions, okra, (and any other veggie you may want to add or substitute) Chopped
2 cloves garlic minced
2 tablespoons garlic powder
2 tablespoon onion powder
1 tablespoon Italian seasoning
1 tablespoon smoked paprika
2 bay leaves
1 can diced tomatoes (28 ounce can)
2 1/2 cups chicken broth
2 medium red potatoes peeled and cut into bite size pieces
THIS IS HOW WE DO IT:
NOTE: You can make this in a crockpot or on top of the stove. I used my instapot
When using the crock pot Sautee your celery and onion on top to the stove
before adding them to the crockpot. Cook for about 2 hours on low. If using the stove top cook for about 1 hour on medium low.
*Sautee the celery and onions for 2-3 minutes
*Add the garlic and Sautee and additional minute
*Add all other ingredients and set your pot for 5 minutes.
*When the time is up let your instapot release pressure naturally for 5 minutes and then release the pressure. Note: I added a few green peas at after it was done because they only needed to heat up.
*Garnish with celery tops (optional)
