Italian Wedding Soup is about a fortuitous marriage of ingredients: chicken broth, meatballs, spinach, parmesan cheese and eggs. This soup is a family classic, so naturally Farideh’s version borrows from her mom’s recipe. Even though this soup isn’t actually served at Italian weddings, you’re still going to fall in love with it. 1. this is a bastardized version of a very antique neapolitan recipe, the "minestra maritata", and it has no eggs , spinach or meatballs. One of the oldest versions need :chicory, broccoli raab, savoy cabbage, escarole and chard, for the veggies, and beef , pork sausages, pork ribbs, and if you can get it, a prosciutto bone and pigskin, for the meats.
