  1. I had bought a bag of the Frozen Ikea meatballs to bring them home and try them. They were so freaking tasty yummy. I have all the ingredients for this recipe. The step I'm going to decline making is the sauce to go over the meatballs. I liked the tomato flavored broth and having the mash potatoes will be my dipping sauce instead. Good job

  2. I didn't have tarragon and sage so used basil and rosemary – Italian meatballs. My dried mushrooms were half button mushroom and half wood ear. I didn't have a stem of celery so used equivalent celeriac stems. Didn't have red wine splashed in a bit of red wine vinegar.

    First time using seitan, first time using tofu, 6 months vegan… these 'meat balls' are better than any of the many I made back when I ate meat.

  3. WE MADE THEM!!!! AND THEY WERE DELICIOUS. I definitely wouldn't call them Swedish meatballs considering the fact that there's soy sauce AND miso paste in them, but regardless, they were mouth-watering delicious!!! We ended up cooking the meatballs on a sheet pan in the oven before simmering in tomato sauce, because we ended up making a WAY bigger batch than anticipated, but they still came out SO DELICIOUS!!! We also did a few more things a bit differently as this was a huge experiment but it was so fun and ours turned out beyond what we had ever imagined.

    Here is an ingredient list and here is a loose outline of what we did to recreate Gaz's meatballs!

    Cucumber salad ingredients – cut cucumber very thin, julienne onions, and add all ingredients into a bowl and let sit in fridge for duration of meal prep/cook time:
    Cucumber
    Onion
    Red wine vinegar
    Sugar
    Salt
    Water

    Meatball ingredients – Blend all ingredients and then fold or mix in vital wheat gluten and tofu crumbles, form meatballs, on a sheet pan in the oven:
    Yellow onion
    Garlic
    Celery stalks
    Dried sage
    Smoked paprika
    Celery salt
    Dried tarragon
    Dried mushrooms
    Soy sauce
    Red wine
    Miso paste
    Vegetable stock
    Salt and pepper
    Liquid smoke Gaz didn't include this ingredient, but we did for a little extra zazzle
    Vital wheat gluten
    Extra firm tofu

    Tomato simmer sauce ingredients – once meatballs are formed and cooked, let them simmer in the tomato sauce for an 1hr 20m or so:
    Chopped tomatoes
    Vegetable stock
    Bay leaf
    Rosemary
    Sage
    Garlic

    Creamy mash ingredients – while meatballs are simmering in tomato sauce peel and boil potatoes. While potatoes are boiling, infuse the non-dairy mylk by simmering mylk with onion, garlic herbs. Once milk and potatoes are done, combine and mash or blend everything together:
    Potatoes
    Non-dairy mylk (we used oat mylk)
    Onion
    Garlic
    Thyme
    Rosemary
    Non-dairy butter
    Salt and pepper

    Creamy sauce ingredients – Once meatballs are done cooking in tomato sauce, remove them, and in another pan heat up oil & saute garlic, onion, and rehydrated mush, then add meatballs and rest of sauce ingredients. Cook meatballs in the creamy sauce until the creamy sauce thickens a little bit. ( I think we cooked for about 20 mins in the creamy sauce?):
    Onion
    Garlic
    Rehydrated mushrooms in veg stock (we ran out of dried mushrooms after the meatballs + had to use fresh mushrooms)
    White wine
    Salt and pepper
    Non-dairy cream
    Reserved liquid from rehydrated mush

    Serve with creamy mash, cucumber salad, and lingonberry jam, and ENJOY!!!

  4. I love all the recipes you share, but I must say this is the first plant based recipe that could shut my grumpy and picky 14-year-old son's mouth. He HATES any mashrooms yet he showed a huge ear-to-ear smile and asked me to add this recipe to our regular dinner menu. I still haven't told him that those meatballs were plant based 😂 Thank you so much for sharing this recipe!!
