A note on pan size: We use a 8 1/2- by 4 1/2-inch loaf pan; if you only have a 9- by 5-inch pan, start checking for doneness 5 to 10 minutes earlier.

  1. This is scary. I just purchased banana's and have them ripening so I can make banana bread. I use King Arthur white whole wheat flour. It's a different species of wheat than the normal you get in all-purpose and not as heavy as whole wheat but better grains (or so I'm told). Love how you mash the banana with a fork. MUCH better texture. Thank you!
