Cucumber Tomato Salad is a super simple healthy salad that packs a punch of flavor. You’ll love the delicious lemon dill dressing!

• 2 English cucumbers, diced
• 1 pint cherry tomatoes, quartered
• 1 red onion, diced
• 2 tablespoons extra virgin olive oil
• 2 tablespoons lemon juice
• 1 tablespoon apple cider vinegar
• 1 teaspoon granulated sugar or honey
• 1 teaspoon salt
• 1/2 teaspoon black pepper
• 2 tablespoons fresh dill, minced

00:01:24 – Add dressing and toss

1️⃣ In a large bowl, toss together cucumber, tomatoes, and onion.

2️⃣ In a small bowl, whisk together olive oil, lemon juice, vinegar, sugar, salt, pepper, and dill.

3️⃣ Pour over cucumbers and toss to combine.

4️⃣ Cover and refrigerate at least 1 hour before serving.

  1. This definitely worths a try… I altered the seasonings a bit since I don’t have them all. I used Chinese dark vinegar, sesame oil, ginger powder, lemon juice and lemon jam, pepper mix, and it tastes great. You can also mix this with bread and cream cheese spread.

  2. Replace dill with a little cilantro and replace lemon juice with lime juice and you have the latin version. Also do you self a favor and use first cold pressed extra virgin olive oil, you won't regret it. I also add hearts of palm and avocado. Oh, also, I don't like raw onion so I use green onion (scallions).
