Southwestern chicken salad

1 mesquite rotisserie chicken
1/2 cup mayonnaise
1 cup ranch
3 chipotle pods + 3 Tbsp adobo sauce
Juice of 1 key lime
1/2 Tbsp onion powder
1/2 Tbsp ground cumin
1 tsp paprika
1 tsp garlic powder
1 tsp sugar
1/2 tsp salt
1 tsp black pepper

Mediterranean
2 chicken breast( lemon her rotisserie)
1 Tomato
3 baby cucumbers cucumber
1/2 sliced purple onion
1/4 cup flat-leaf parsley

Dressing
6 Tbsp olive oil
6 Tbsp red wine vinegar
3 Tbsp dijon mustard
1 1/2 Tbsp white balsamic vinegar
1/2 Tbsp white wine vinegar
1/2 Tbsp white sugar
1 tsp coarse salt
2 Tbsp Italian seasoning
1 packet of Italian dressing mix

Fresh Mexican salad
3to 4 cups shredded chicken
1 cup mayo
1/2 cup Mexican sour cream (Lala)
1 tomato
1/4 purple onion
1/2 large jalapeΓ±o
1/4 cup chopped cilantro
Salt and pepper to taste

  1. Suggestion: Make healthy Bone Broth. Keep bones and skin, bag up and keep in freezer until your ready to cook. To cook for each whole chicken bones, add 2-3 cups water to pan with bones and skin. Bring to boil and then simmer for 6hrs. Or put in slow cooker and cook 12 or more hrs. Add salt to taste. Healthy bone broth to drink or add to soups.
