In this episode of In the Kitchen with Matt I will show you how to make a Keto Bar. Are you on the Keto diet but love eating granola bars? Well this keto bar is a great substitute for a granola bar. This keto recipe is very easy to make and low carb and gluten free. If I can do it, you can do it. Let’s get baking! 🙂

Ingredients:
1 cup chopped/smashed pecans (125g)
1 cup thin sliced almonds (110g)
1 cup packed coconut flakes, unsweetened (75g)
1 large egg
3 Tbsp. of stevia (or stevia blend 2 parts stevia 1 part sugar) (45g)
2 Tbsp. peanut butter (sugar-free) or almond butter
1 Tbsp. coconut oil (15g)
3/4 tsp. of salt (4g)
Tools:
bowls
spatula
bag
meat tenderizer or rolling pin
silicon pan (granolabarpan.com) or brownie pan or muffin pan
Makes 12 keto bars (roughly same size as a granola bar)
I used the “Very Well Fit” Nutrition calculator and came up with this: Per Bar – Calories168, Total Fat 16.1g, Saturated Fat 4.2g Cholesterol 0mg Sodium 149mg Total Carbohydrate 8.5g Dietary Fiber 2.9g Total Sugars 1.3g Protein 3.9g Vitamin D 0mcg Calcium 29mg Iron 2mg Potassium 125mg

You can also add cinnamon to this for more flavor and it also helps to lower sugar levels and cholesterol.
