Base Tofu for General Tso’s and Orange Tofu
1 block firm tofu, pressed
1 tbsp soy sauce
2 tbsp cornstarch
Pinch of salt and white pepper
3 tbsp avocado oil, for frying
1. Press the tofu. Once pressed, cut into 1-inch cubes and transfer to a large bowl.
2. Add the soy sauce, salt, and white pepper, and gently mix. Sprinkle over half of the cornstarch, mix, add the second half, and mix. Set aside.
3. In a large pan over medium-low, add the oil. Once heated, add the tofu and fry until golden. Remove and set aside.

General Tso’s Tofu
Sauce
3/4 cup broth
1/4 cup low sodium soy sauce
1 tbsp rice vinegar
1 tbsp vegan hoisin
2 1/2 tbsp brown sugar
1/4 tsp white pepper
Remaining Ingredients
4 cloves garlic, minced
1 tbsp grated ginger, packed
1/2 tsp red pepper flakes
1 tbsp cornstarch
¼ cup warm water
1 1/2 tsp toasted sesame oil
1/4 cup sliced green onions, for garnish optional
Toasted sesame seeds, for garnish
1. To a small bowl, mix together all of the ingredients for the sauce. Set aside.
2. In the same pan that you fried the tofu, add in the garlic, ginger, red pepper flakes, and a pinch of salt. Add additional oil as needed. Sauté until fragrant, about 2-3 minutes.
3. Add the sauce and bring to a boil.
4. In a small bowl, mix together the warm water and cornstarch until smooth. Add it to the simmering sauce and whisk through. Allow the sauce to simmer, mixing often, until thick, about 6-8 minutes.
5. Add in the cooked tofu and sesame oil. Mix until well combined. Season with additional salt as needed.
6. Serve over rice with green onions and toasted sesame seeds. Enjoy!

Orange Tofu
Sauce
2/3 cup orange Juice
3 tbsp + 1 tsp soy sauce
3 tbsp brown sugar
2 ½ tbsp rice vinegar
1 tsp orange zest (zest of 1 small orange)
Remaining Ingredients
4 garlic cloves, finely minced
1 tsp grated ginger, packed
½ tsp red pepper flakes
¼ cup warm water
1 tbsp cornstarch
2 tsp toasted sesame oil
1/4 cup sliced green onions, for garnish optional
Toasted sesame seeds, for garnish
(Instructions are same as General Tso’s Tofu above, just use the orange tofu ingredients)

Tofu Sisig Recipe (adapted from @TheFoodieTakesFlight )
Ingredients
Tofu
2 blocks extra-firm tofu
1/4 cup cornstarch
2 tbsp soy sauce
Pinch of salt and white pepper
6 tbsp avocado oil
6 peppercorns
3 bay leaves
Sauce
3 tbsp vegetable broth
2 tbsp soy sauce
1/2 tbsp white vinegar
1 tsp organic sugar
1/4 tsp ground black pepper
Pinch of salt
Remaining ingredients
4 cloves garlic, minced
1/2 red onion, diced
1-2 jalapeños, chopped (with seeds removed if desired)
2 Thai chilies, diced
1 bell pepper, diced
6 oz. baby bell mushrooms (or a variety of choice), finely diced
1/2 tbsp grated ginger (packed)
2 tbsp vegan mayonnaise
1 tbsp calamansi juice (or lime or lemon juice)
½ cup green onion
Optional: 1/3 cup vegan Chicharrón, crumbled (I used @vegetari_healthy_bites )
Salt, as needed to taste
Instructions
1. Prep tofu the same as above but cut them into small cubes. Season and set aside.
2. In a large pan over medium-low, add the oil. Once heated, fry the peppercorns and bay leaves until the bay leaves begin to brown. Remove them and discard.
3. Add the tofu and fry until golden. Set aside.
4. To a small bowl, mix together the sauce ingredients.
6. In the same pan that you fried the tofu, add in the garlic, all but 3 tbsp of red onion, peppers, and a pinch of salt. Add oil as needed. Sauté until fragrant.
7. Add mushrooms and ginger, and cook until the mushrooms are soft and reduced in size.
8. Add the sauce and cooked tofu. Season with additional salt as needed.
9. Mix in vegan mayonnaise, reserved red onion, calamansi juice, and green onion.
10. Top with vegan Chicharrón and enjoy!

Here's a great tip…whenever you need to thicken a recipe use the cornstarch/flour with any liquid to replace the water. In these recipes, I would use stock. What makes the difference is the "slurry" won't rob seasonings. If anything, it will be more flavorful. My mouth was watering with each recipe. Yummy!

Hi guys! This is a call for help. Although I'm ok with the taste, I can't stand biting on the spongy texture of tofu (I have the same problem with mushrooms). I have looked for alternative ways to cook it, but it seems like I'm unable to find anything that would help.
