This Baingan Bharta is simple and super easy flavoured bharta made without fire-roasted eggplant and is one of my “THE” favorite dish. The only thing you have to do is fry the eggplant and add spices. The smoking aroma that spreads throughout the kitchen of roasting of baingan along with garlic just makes me feel more hungry. This recipe is an ideal side dish for Indian flatbreads like rice flour Bhakri, chapati or roti, but it can also be served with dal & rice combination.

Ingredients:
• Eggplant 1 medium size
• Garlic 2 cloves
• Olive oil / peanut oil 5-6 Tbsp
• Onion, finely chopped 1/2 medium size
• Roasted Red chili flakes 2 Tsp (If you don’t have roasted chili flakes, then roast the dried red chillies on medium heat for 4-5 minutes and crush it finely using hands).
• Roasted peanut powder 3 Tbsp
• Freshly grated coconut 2 Tbsp
• Fresh coriander leaves, Chopped 1 tbsp
• Lemon Juice 1 Tsp
• Salt to taste

Instructions-
1. Wash and cut eggplant into thick slices.
2. Rub mustard oil on each side of the slices and roast it on a heated pan, medium flame.
3. Roast until the eggplant is soft. Add garlic cloves and allow it to roast on each side under closed lid. This should take 5-7 minutes.
4. Remove eggplant and garlic onto a separate plate and allow them to cool down before peeling the skin off the eggplant.
5. Mash the eggplant using a masher in a separate bowl. Keep aside.
6. Mash by hand the remaining ingredients , roasted dry red chilli flakes, chopped onions followed with salt as per taste.
7. Now, Add roasted peanut powder, freshly grated coconut, chopped coriander and lemon juice. Mix all ingredients well.
8. Enjoy, the bharta/bharit with hot Bhakri or dal rice.
