it doesn’t have to take days to make a great soup.
this is a very simple, clean, low-fat, fairly low salt [unless you add a lot more] soup like mom used to make. jazz it up by adding stuff you like – sometimes i add chopped chorizo or kielbasa or ham… or half a cup of heavy cream and a tablespoon of Dijon mustard to make a slightly tart cream soup… use any veggies or spices you like! certainly we can all be more creative than the canned soup/dry soup industry! i had this finished and in my belly within 3 hours or so… and tomorrow it will taste even better!

ps please excuse wheezing here and there… it is allergy season and i sometimes suffer from mild asthma in the morning in spring and fall. this does not excuse the fact that i need to clean my burners. chef buck’s shiny gorgeous silver burners put me and my burners to shame.
