You don’t have to soak them before cooking them , they only take 15 to 20 minutes to cook lentils ate easy to cook and they absorb flavor wonderfully with the fresh vegetables lemon juice and olive oil

Full Ingredients:
1 cup lentils / 100 grams
1/2 red onion
1/2 cucumber
1/2 lemon 🍋
1/2 red pepper
1/2 yellow pepper
Patsley

For seasoning
2 tbsp olive oil
1/4 tsp oregano
1 tsp maple syrup or honey
Salt and pepper to taste

In pan add 1 cup lentils , water on medium heat bring It to boil until cooked than drained
Set aside
During the lentils cooking grab a small bowl to make dressing add 2 tbsp olive oil , 1/4 tsp oregano , 1 tsp maple syrup or honey , salt and black pepper desires squeeze 1/2 lemon
Chop onion, cucumber ,onion, tomato , red and yellow pepper , parsley
In another bowl add the chopped veggies , the lentils , then drizzle with dressing and toss until combined
now your lentils salad Is ready
You can served right away or let It sit for 30 minutes so the flavours can Meld
