1 tsp honey (optional)
3/4 cup warm water
1/2 tsp active dry yeast (optional)
60g egg white powder (3/4 cup)
1 tbsp arrowroot starch/flour/powder (optional) (Thank you to Philipp Briese for the comment and the idea of adding arrowroot!)
1 tbsp allulose
1/4 tsp cream of tartar
1/4 tsp redmond real salt
1 tsp egg yolk powder (note: fresh yolks don’t give the same effect)
1/4 cup ghee or butter
1 tbsp fresh rosemary, finely chopped
1 tbsp fresh thyme leaves, finely chopped
flake salt to taste

Preheat the oven to 325 degrees. Whisk together the honey and warm water in the bowl of your stand mixer. Sprinkle the yeast over the water mixture. Allow to stand for 3-5 minutes to let the yeast bloom. Add in the egg white powder, arrowroot, allulose, cream of tartar and salt. Start the mixer with the whisk attachment on low speed. Gradually increase the speed until full. Mix on full speed for 5 minutes. Reduce speed to low, add in the egg yolk powder and mix just until combined and no lumps are left. Using an ice cream scooper portion the batter into 9 rolls and place on a greased and parchment paper lined baking dish. Bake for 20 minutes. In a microwave safe bowl heat the ghee or butter until melted. Mix in the rosemary and thyme. Remove the rolls from the oven and pour the butter mixture evenly over the top. Return the rolls to the oven for 10 more minutes. Allow to cool in the pan for 5-10 minutes. These rolls are best served warm. Enjoy and Happy Thanksgiving!

  1. I've had some luck with a more bread-like appearance using whey & egg white powder in place of whole eggs. The bubbles are more irregularly shaped and not just different sizes. The only problem is in a loaf, I'll get a bubble that runs the whole length of the loaf making it unusable for many things. But in a roll it is fine. They come out very soft on the inside like Hawaiian bread. They feel moist too. It goes down easier without anything compared to how dry it is without. I can't use 100% whey powder. It's too soft and too 'moist' (I know people hate that word, sorry). I actually use 2 parts egg white powder and 1 part whey in my last batch which helped stiffen them up a bit more.

  2. I don’t have just the dried egg yolks. Any thought on using the whole egg powder? I’d like to make them for Thursday. As usual you did it again. I love the music too. 🎶🍁🦃. Edit I read through the comments and you answered the question already. 😘

  3. We discovered you around a week ago and my husband said to order a air fryer/convection and a kitchen-aid mixer. The fryer is on its way and I hope to get the other in my favorite teal/aqua color. We have been doing keto but it needs jazzed up with some new ideas. We miss bread and are so happy to find your bread/rolls creations. We are in our early 70's and it is such a pleasure to find so many wonderful young people who help us out with new ideas. Thank you!

  4. 1t honey, 3/4 tepid water, 1/2t dried yeast, sit 5min. 3/4 C egg whites. 1T arrowroot powder. 1T alluose, 1/4t salt, 1/4t cream of tarter, beat in mixer, beat 5 mins until stiff, add 1t yolk powder. Mix and fold in. Spray pan well, scoop out 9 rolls, shape with fingertips. Cook 325°F 20 mins 1/4 C melted butter or ghee with chopped thyme and rosemary, add to top of rolls, sprinkle with salt flakes, cook for another 10 minutes. Serve warm.

  5. I somehow discovered you just a few weeks ago–I've been lowcarbing since 1996, and maintaining at goal (60 pound loss) since 1999. (I too had to eliminate both nuts and dairy to get to–and stay–at goal, and like you I resisted doing that for a very long time.) Even this old "pro" is finding your videos incredibly helpful–always looking for new ideas for simple foods and meals. Thank you so much for all you are doing.
