This Vegetable Soup is PERFECT for a cool fall day. It is comforting and delicious as well as super healthy for you!

Vegetable Soup Recipe
1-2 Tbsp. olive oil
1 medium onion, chopped
2 stalks celery, chopped
3 clove garlic, minced
1 medium or large potato, cubed
1 zucchini, chopped
2 large carrots , chopped
1 c green beans, fresh chopped or 1 can
1 c corn
1 can great northern beans
1 large can of tomato sauce
2 15 oz. cans fire roasted tomatoes
2 tsp salt, or to taste
1 tsp ground black pepper
1/2-1 teaspoon red pepper flakes *optional
2 teaspoons paprika
1 teaspoon Italian seasoning
1/2 teaspoon basil

Add olive oil to a large pot. Sauté the onions, celery, and garlic in the olive oil over low to medium heat. Once translucent, add the other vegetables. Add seasonings, vegetable broth, and canned tomatoes. Stir until combined and let simmer until vegetables are tender, about 30-45 minutes. If the soup is a little bitter add a teaspoon of white sugar. This will cut the acidity from the tomatoes.

Feel free to add whatever vegetables you have on hand. This soup is very customizable.

Also, if you would like pasta in this soup, boil in a separate pot and add to bowls before adding in the soup. Package separate from leftovers so that the noodles do not soak up all of the liquid.
