Healthy Veggie Stew Recipe 🍲 Easy One Pot Meal

As soon as it gets cold out I just want warm, comforting meals! This amazing veggie stew definitely checks all the right boxes for me. Comforting, delicious and can be made in one pot!

Amazing Veggie Stew Recipe:
4 potatoes
4 carrots
1 onion
4 celery stick

Chop veggies and sauté for 10-15 minutes using veggie broth.
Stir and add veggie broth as you go so it doesn’t stick.

4 cloves of garlic
1 tbsp thyme
1 tbsp rosemary
1 tbsp gar pow
1 tbsp onion pow
4 bay leaf
1 tsp ginger powder

Add spices to the bottom of the pot and sauté for 5 minutes.

Add 8 cups of low sodium veggie broth.
Simmer for 20 minutes.

Remove 4 cups of cooked mixture and blend.
Add back into pot along with:

1 cup of uncooked pearl barley (you can use white rice, lentils, pasta, quinoa)
3 cups (2 cans) of white Navy beans
2 cups frozen corn

Cook for another 20 minutes.

Add 2 Cups frozen peas and cook for another 5 minutes.

Remove from heat and allow to cool a bit so it thickens and set’s up.
Add salt to taste.
Enjoy!

  1. I made a similar one to yours yesterday. Ate 2 meals then froze half. Today took the unfrozen half and started adding things that I had in the fridge that I didn't want going bad. OMG! Both versions agree freaking awesome! I'll have another serving tonight then freeze this half. Delicious!

  2. This would be much tastier with a much greater depth of flavor if you caramelize the onions in a bit of oil first, or create a mirepoix sweating them down slowly with diced celery and carrots and some olive oil, adding tomato paste and then finally broth and/or dry wine to deglaze the pot.

  3. Mmm looks delicious!!! I've been prepping my own soup once a week for a while now!!! I boil 6 small golden potatoes, add them to my vitamix blender, add tomatoes, garlic, onions, cilantro, parsley, whole Lemmon, jalapeno, Fresno pepper, kale, and distilled water! 💧 add it to my pot with better then bullion veggie base!! I also add red pepper flakes and tons of veggies!!! I also prepare black beans, rice, and quinoa and keep it separate! But I add it whenever I have a bowl!!! I loved your video btw! Now I have more ideas on new things to add to my soup next week 🙂
