This healthy, sugar-free donuts recipe is a healthier and tastier alternative to store bought donuts, without compromising the taste ! These fluffy sugar-free donuts are not fried unlike store bought ones, but rather these healthy donuts are baked, that too without using the oven ! Try these healthy donuts as they are quick and easy to make and a perfect treat for everyone in the family !!
INGREDIENTS FOR DONUTS/ DOUGHNUTS
*1/2 cup whole wheat flour/ गेहूँ आटा
*1/2 cup refined flour/ मैदा
*1 tsp active dry yeast/ ऐक्टिव ड्राई यीस्ट
*1/4 tsp salt/ नमक
*1/2 tbsp jaggery powder/ गुड़ पाउडर – for yeast mixture ( you can replace jaggery with other sweeteners like honey/ शहद, maple syrup or sugar/ चीनी)
*1 1/2 tbsp jaggery powder/ गुड़ पाउडर – for the donuts/ doughnuts dough
*1/3 cup milk of your choice/ दूध
*2 tbsp ghee/ butter/ घी/ बटर
*2 tbsp warm water/ पानी
*Some melted ghee/ घी or butter/ बटर for brushing the donuts
*some desiccated coconut for garnishing
FOR CHOCOLATE GLAZE
*1 1/2 tbsp unsweetened cocoa powder/ शुगरफ़्री कोको पाउडर
*1/4 tsp cinnamon powder/ दालचीनी पाउडर
*1 tbsp honey/ शहद
*1/2 tbsp milk for your choice/ दूध
1- In a low-mid heated saucepan, add 1/3 cup of milk. Let it heat up until warm ( make sure the milk should be warm. It shouldn’t be hot or it will kill the yeast ). Turn off the heat. Add 1/2 tbsp jaggery powder (or any other sweetener of your choice like honey or sugar) followed by yeast. Give it a mix, cover and keep it aside for 10 minutes until this mixture becomes foamy and bubbly.
2- Now in a big bowl, add whole wheat flour, refined flour, salt, 1 1/2 tbsp jaggery powder, and ghee. Add in the activated yeast mixture which has turned foamy and bubbly and mix everything well using your hands. Add 2 tbsp warm water and knead it into a soft dough. Cover the dough and keep it aside to rest for about 1 1/2 hour.
3- After 1 1/2 hours, dough will double up in size. Take this dough on floured surface and using a rolling pin, roll it into a thick circle. Cut donuts shapes using a donuts/ doughnuts cutter or anything from your kitchen which can help you get this shape ( I have used a pickle jar lid and water bottle lid as a cutter ).
4- Place these donuts shapes on to a parchment paper lined baking tray. Cover the tray and keep it aside to rest for 30-40 minutes.
5- After 30-40 minutes, donuts will be doubled in size. Brush their tops with some melted ghee or butter.
6- Now on a low heat, keep any type of big cooking pot such as wok or sauce pan. Place the baking tray in the center( if your baking tray is small and if it touches the bottom of the wok, you need to place a any type of metal stand in between the wok and the tray so that the baking tray doesn’t come in a direct contact with the heat ). Now cover the pot. Let it cook for around 1 5 minutes.
Or bake in a preheated oven at 180°c/ 350°f for around 15 minutes.
7- Till the donuts/ doughnuts are cooking, let’s prepare the glaze by mixing all the ingredients of glaze in to a bowl and making a smooth, creamy paste. Keep it aside.
8- After 15 minutes, turn off the heat and transfer the donuts in to a plate and start applying the chocolate glaze on top of them. Sprinkle some desiccated coconut or chopped nuts if you like and enjoy donuts while they are warm !!
