*NOTEHEALTHY POTATO SALAD RECIPE
2 pounds of small red potatoes
2/3 cup diced red onion
2/3 cup diced celery
1/2 cup plain Greek yogurt
1/2 cup mayonnaise
2 teaspoons red wine vinegar
4 large hard-boiled eggs, chopped
A handful of fresh chopped parsley
1/2 teaspoon sea salt
1/4 teaspoon black pepper
Cut potatoes into quarters and put them into a medium pot. Add enough cold water to the pot to cover the potatoes by an inch or so. Bring to a boil over high heat and simmer until the potatoes are fork tender (about 5 more minutes after boiling).
Drain the potatoes and place them in a large bowl, cool. Add in onion, celery, yogurt, mayonnaise, vinegar, salt, and pepper. Stir until everything is mixed well.
Gently mix in hard-boiled eggs and parsley. Adjust seasonings and enjoy!

Do you use a 1 tbsp of mayonnaise or 1/2 cup? The recipe says 1/2 cup but you mention 1 tbsp in the video.
You have a very good way of making hard boiled eggs – going to try that! I'm not a fan of "Greek Style" yogurt, so I'll stick with whole milk plain. copying and pasting the above recipe and dividing it for two – One for me and one for me later! 🤣😋

Could you use taziki (probably spelled wrong) dip instead of greek yogurt?
For making eggs easy to peel, what I do instead, is bringing the water to boil first then I put the eggs and cook them for about 7 min
