With the weather cooling down, feel cozy and healthy with this simple, scratch chicken soup recipe.

My pink pot:

1/2 onion, chopped
2 carrots, chopped
2 celery, chopped
2 teaspoons turmeric powder
1 tablespoon ginger, minced
4 cloves garlic, minced
1.5 lbs chicken thighs, skin off
32 Oz bone broth plus 1 cup water
3 cups chopped kale
Salt and pepper to taste
Juice from half a lemon

In a pot, drizzle with olive oil and sautée onions until translucent about 3 minutes. Add celery and carrots and pinch of salt. Sauté for another 3 – 5 minutes until caramelized. Add ginger, turmeric, and garlic and cook until fragrant for a minute.

Add chicken, bone broth, and water. Bring to a boil and then simmer on med-low heat for 30 mins. Remove chicken and cut into chunks. Add back into the pot along with kale and lemon juice. Cool for another 10 minutes and serve

  1. It looks tasty, but your already putting in fresh whole ingredients. Imo, chicken bone really don't have much or good flavor. Most of the wholesome flavor comes from the chicken flesh. Additionally, that stock has the same ingredients u already put in, lol. Why bother with stock that's been sitting around on the shelf for who knows how long.

  2. I just cooked this soup for my dinner and it is SO GOOD and so quick and easy!! I made a huge batch so I can eat it for the next couple of days, too! I added some potatoes to the recipe, though, because I'm a hungry girl 😂 no post partum here lol

  3. It would never have occurred to me to use ginger!! 😲!!

    If you are using powdered ginger, instead of fresh ginger, how much would you use? 🤔💭🤨

    I would’ve added some sage or poultry seasoning to the broth.

    Have you tried doing it in an instant pot yet or a crockpot??
