Ingredients:
– 3 ripe bananas
– 1 cup buckwheat flour
– 1 tbsp hemp seeds (optional)
– Cinnamon (to taste)
– 1 tsp baking soda
– 1-2 tbsp apple cider vinegar
Method:
1. In the Optimum G2.6 high-speed blender, blend the ripe bananas until smooth.
2. Add buckwheat flour, hemp seeds (if using), a sprinkle of cinnamon, baking soda, and apple cider vinegar.
3. Blend until you have a smooth pancake batter. If the batter is too thick, you can adjust the consistency by adding a little more plant-based milk.
4. Heat a non-stick skillet or pan over medium heat.
5. Pour the pancake batter onto the skillet to form your desired pancake size.
6. Cook until bubbles form on the surface, then flip and cook until golden brown on both sides.
7. Repeat until you've used all the batter.
8. Stack the pancakes on a plate and top with your favourite toppings, such as fresh fruits, nut butter, or a drizzle of maple syrup.
9. Enjoy these wholesome and nourishing gluten-free vegan banana pancakes!
