MONDAY
breakfast: peach parfait with honey vanilla greek yogurt and homemade granola
granola recipe-
lunch: tuna lettuce cups *I make a dijon dressing with olive oil, dijon, lemon & red wine vinegar*
dinner:
TUESDAY
breakfast: smoothie bowl with homemade granola
granola recipe-

lunch: shrimp spring rolls *sub for gluten free soy sauce in peanut sauce*

I did shrimp, lettuce, cabbage, carrots, and rice noodles
dinner: lamb chops with honey dijon salad and smashed potatoes
lamb chops *can also be grilled*
honey dijon salad
Dressing
1 & 1/2 tablespoons Dijon mustard
3 tablespoon honey
1/2 cup olive oil
3 tablespoons apple cider vinegar
Salt & pepper
Whisk all ingredients until combined
Salad
Arugula
Shaved almonds
Hemp seeds (a few tablespoons at the most)
Toss salad with dressing

WEDNESDAY
breakfast: mushroom toast
lunch: snack plate with homemade hummus
dinner: salmon caesar salad
