CHICKEN
2 chicken breast
2/3 cup non fat Greek yogurt
2 cloves minced garlic
2 tsp oregano
2 tsp salt
1 tsp black pepper
Juice from 1 lemon

1. Pound chicken so it’s 1/2 inch thick

2. Then marinate chicken breast with all the ingredients listed for 30 minutes at room temp

3. Bake at 375F for 20-30 minutes (I baked mine for 25 minutes)

4. Allow to cool and then dice to size preference

CUCUMBER SALAD
1-2 Persian cucumbers, de-seeded and diced
2 roma tomatoes, de-seeded and diced
1 purple onion, diced
Juice of 1 lemon
4 TBSP fresh minced parsley
salt and pepper to taste
– mix this together

TZATIKI SAUCE
1/2 English cucumber, grated & strained
2 cup nonfat Greek yogurt
2 cloves minced garlic
Juice of 1 lemon
2 tsp dried dill
1 tsp salt
– mix this together

  1. This reminds me of when my parents made gyros and they told me it was beef, so I tried it and it tasted a little funny…it was lamb..If you like lamb good for you but at the time I was scared to try it because I loved lambs, so I was angry at them for making me eat lamb.
