German potato salad is a no-mayo, vinegar-based potato salad that’s traditionally served warm. Baby red potatoes are gently tossed with a tangy, and savory bacon Dijon dressing that’s seriously amazing. It’s perfect for potlucks, parties, barbecues, and of course, Oktoberfest!
Whenever I want to switch up my classic potato salad routine— this authentic German potato salad with a tangy sweet dressing is a wonderful alternative. It’s perfect for when you’d like a vinegar-based, no-mayo potato salad, but with extra oomph. And that’s all thanks to the deliciously warm bacon vinaigrette, similar to the bacon Dijon dressing in my favorite sautéed carrots recipe.
I first enjoyed German potato salad (many times over) when I lived in Heidelberg, Germany in college, and I’ve been a fan ever since. Traditionally, this “meat and potatoes” recipe combines baby red potatoes with ham or speck (German bacon) and it’s served warm. But I think it’s equally tasty served cold for potlucks and summer cookouts!

Let's take a vote – are you team American potato salad or German potato salad?? And if there should be another contender, let me know! 😉 xo – Lisa
I had this salad during our honeymoon, in several locations in Bavaria. Thank you for the recipe, and tips.
Made your German potato salad over the weekend and it was a big hit! But, the best was having the leftovers the next morning with two eggs on top, delicious.
New juicing and beverages recipe please?
just made this – think i slighty over did the potatoes, but its still tastes amazing, had to try some and its hard not to keep going….will enjoy these later. How long will they keep in the fridge? thanks for these amazing no-mayo recipies
I always want to try new ways of mixing spices, while I was hesitant about it with the bacon fat and honey, I must say this potato salad came out so so good! Thank you Lisa once again for another amazing recipe! 🤤 😊
Looking so delicious 😋
Tried this yesterday and it was fantasticly fresh. Thank you for a good recipie.
I made a variation of this recipe, since I lacked the exact ingredients….OH MY 😋!!!!
How come I've never heard of this?? Look so bomb! I might cut my potatoes before I cook them and not sure yet I might add a tiny bit of sugar but I can't wait to try this!!
Made it. Loved it. Great job!
please do another seasonal meal prep series!! I’ve done them a million times! 💗
Wishing my Daddy was still here… I’d love to know if his German Ma made this for him… along with her head cheese and sauerkraut 😋 Thanks for sharing… now off to the kitchen 💃🏻 💖
German potato salad is my favorite! This looks amazing!🤤
Im gonna try it
Love this recipe
Oh WOW. I cannot wait to make that!!
Beautiful, delicious, and so instructional. Thank you. ❤
Excellently delicious recipe! Thank you so much Lisa 🥰
I love potato salad in any style. This one looks absolutely delicious – I mean, everything tastes better with bacon, right? Will definitely give this one a try.
Annoying because you seem to have forgotten how to pronounce the "g" at the end of "ing". What is a dresseen anyway? Gosh.
Looks so good!
I adore German potato salad! I will definitely give your recipe a try. It's fairly similar to how I typically make it. 🙂
I like to make the meals that you supply on this platform. I also have one of your cookbooks. I will definitely try this very soon.
My semi truck stomach is ready to devour that recipe. Thank you so much.
Yum Lisa!!! thank you so much 💕🙂
My grandparents were from Neunkirchen and Schoneshof, so I’m definitely in the German potato salad camp.
Looks good!! I can’t handle cutting hot potatoes, plus the skin will start slipping off. I’ll cut them first and then boil.
I just made this with leftover roasted potatoes, absolutely delicious!
Oh my gosh! I can't wait to try this! 💛💛💛
I am excited about this this recipe. I’m allergic to eggs so mayonnaise is not an option.
My mom and grandma remove the potato 6:23 jackets by hand (ouch, ouch, ouch) and we almost always do not wait long enough and burn our hands. I might step away from family tradition and add mustard to the dressing. One thing I find gross is other recipes that add hard boiled eggs to the salad.
Thanks for your version!
I made this yesterday and it was so good. The only thing is that I didn't have apple vinegar so I used a bit of orange juice instead and it worked great! Thanks for the recipe!
I absolutely want to try this recipe!
This looks delicious! Can't wait to try it
Yummy makes me hungry 😋
I haven’t had this in YEARS! Yours looks so good…😋
One should note that this is not classic German potato salad (if you mean the country) and rather potato salad made after the inventor, a guy named "German". We do peel our potatoes and usually dont use bacon but cubed ham, add mayo and much more!
Fun fact: Depending on where you are in Germany, ppl will consider a mayo-based potato salad normal and this kind of recipe really weird^^ I only got to know this kind of recipe a few years ago and fell in love with it instantly. Highly recommend rosemary + thyme for herbs!
