A Warm Vegetarian Freekah soup perfect for the colder weather. Very easy with minimal ingredients.
– Vegetable Oil 2TB
– 1/2 Red Onion diced
– Pinch of Salt & Pepper
– Freekah (washed, soaked & drained) 1 Cup
– Vegetable Stock 2 Cups
Sauté onions in oil on medium heat until tender then add seasoning and the drained Freekah.
Add vegetable stock and bring to a boil. Simmer on low heat for 45mins.
Blend using hand mixer until desired consistency. I like a thicker soup to better taste the Freekah.
Served in a bowl with chopped green onion, lemon & green olives on the side.
