How are you doing? I am so excited for the weekend! Coachella is coming up and I feel it’s been such a long time ago that I have visited any festival.
Do you still remember my first Coachella vlog video? Feels like a lifetime ago. It will be so fun to spend some time with friends and just dance, sing and let go!
I feel it’s all about this balance. Some weeks I wake up everyday very early & work a lot and sometimes I create time to do fun things, indulge and have fun!
Also while I am prepping for my looks I wanted to share one of my new favorite Carrot Bread recipes! This is delicious to have as a healthy snack, breakfast or dessert!

Carrot Cake Loaf Recipe:
– 4 large eggs
– ⅓ cup coconut sugar
– 2 tbsp maple syrup
– ⅓ cup melted and cooled coconut oil
– 1 ½ tsp vanilla extract
– 1 ⅔ cups superfine blanched almond flour
– ¼ cup coconut flour
– 1 ½ tsp baking powder
– 1 tsp ground cinnamon
– ¼ tsp ground nutmeg
– ⅛ tsp ground cloves
– ⅛ tsp fine sea salt
– ¾ cup finely grated carrots
– ⅓ cup chopped pecans or walnuts (optional)
– organic raisins, no sugar added (optional)
