We call this Fancy Chicken Salad because of the dressing, grapes and pecans. It’s a fresher and lightened-up version of classic chicken salad and it’s perfect for meal prep!

CHICKEN SALAD INGREDIENTS:
►1 lb cooked chicken breast (4 cups diced)
►2 cups seedless Red Grapes, halved
►1 cup (2-3 sticks) Celery, cut in half lengthwise then sliced
►1/2 cup Red Onion, finely chopped (1/2 of a small red onion)
►1 cup Pecans, toasted and coarsely chopped

DRESSING INGREDIENTS:
►1/2 cup mayo
►1/2 cup sour cream (or plain Greek yogurt)
►2 Tbsp lemon juice
►2 Tbsp dill, finely chopped
►1/2 tsp salt, or to taste
►1/2 tsp black pepper

  1. I put my grapes and grape tomatoes between 2 matching 5.2 cup plastic lids, or whatever size you have on hand(I use he Rubbermaid ones) bottom one faced where it will capture juice, top lid facing opposite so there is more room in between them. Slide a large sharp knife thru (in a slicing manner) the gap between the 2 lids, slicing the grapes or tomatoes in half. Easy to do, maybe do a practice run with couple of grapes. I like it since all the juice stays in bottom lid and saves time if cutting a large amount of fruit.
