Here’s what you’ll need:

SOUP #1:

Creamy Broccoli Soup + BBQ Chickpeas

1/2 cup cashews (80g)
1 medium sized onion (or 2 small ones)
2 cloves garlic
1 medium sized broccoli
1 1/2 cups yellow potatoes, peeled and cut into cubes (250g)
1 tsp thyme
chili flakes to taste
4 cups veggie broth (1litre)
salt, pepper to taste
a handful of fresh parsley

BBQ Chickpeas:

1 cup chickpeas (200g)
smoked paprika, dried herbs, black pepper, seasoned salt
1/3 cup BBQ sauce (80ml)
1-2 Tbsp water

SOUP #2:

One Pot Pasta Soup

1 medium sized onion (or 2 small ones)
1 clove garlic
1 tsp oregano, dried
2 bay leaves
1 – 2 tbsp tomato purée
1 can diced tomatoes
4 cups veggie broth (1 litre)
2 cups water (500 ml)
1 can kidney beans
about 2 cups frozen spinach (300g)
about 3 cups small cut pasta (185g) [I used ~220g in this video]
salt, pepper to taste
a handful of fresh parsley
a few tbsp nutritional yeast

*add a bit more veggie broth in the end for more ‘soupiness’ if needed

SOUP #3:

Roasted Sweet Potato and Carrot Soup:

600g sweet potatoes (21 oz)
250g carrots (9 oz)
1 – 2 red onions
1 tbsp coconut oil
juice of 1/2 lemon
1 tbsp tomato purée
1 tsp tumeric
4 cups veggie broth (1 litre)
salt, pepper to taste
